Jen's Lasagne by Jenifer Papas

Brown together:
1 Lb ground sausage (I use Byerly's brand - mild)
1 Small yellow onion, chopped
2 Cloves garlic, chopped

Add:
2 Cans crushed or diced tomatoes
1 Cup of water
1 Small can tomato paste
1 Tbsp finely chopped fresh oregano
Pinch of salt
Pinch of pepper

Cook:
Simmer for 1/2 hour over low heat, stirring frequently.

Cheese Mixture:
2 C 2% cottage cheese (skim is fine)
2 C Mozzarella cheese grated (part skim is ok)
1 C grated Parmesan cheese
1 Egg
1/4 C dried parsley flakes
Mix together well.

Instructions:
In a 9x13" greased pan, layer ready to bake lasagne noodles,
1/2 of the cheese mixture, and a little less than 1/2 of the sauce.
Then do another layer of each, using all of the remaining sauce.
Sprinkle with some Parmesan cheese and
bake 45-60 minutes in 350* oven.
